Moroccan olive salad
1 can pitted green olives
3 garlic cloves, chopped
1 red bell pepper, diced
3 tbsp oil
3 tbsp tomato paste
1 tbsp paprika
1 tbsp. salt
1 tsp. cumin
2 tbsp cilantro, chopped
1 tbsp. Lemon pulp, chopped
2 tbsp lemon juice
Drain the olives and soak in hot water. Repeat twice.
Sauté the pepper in oil for 5 minutes, add the garlic, the tomato paste and the spices. Cook for 5 more minutes.
Add the olives, 2 tbsp water and the rest of the ingredients.Cook for 5 more minutes.
